Seven Step Brewing Method - Awaken the Taste of Tie Guan Yin
1. Heat the teapot: Use boiling water at 100°C to heat the teapot and activate the tea's aroma.
2. Ideal amount of tea: Use 7-8g of tea leaves, suitable for a teapot of about 120ml.
3. High Pour: Pour water along the sides of the teapot to make the leaves expand.
4. First Awakening: Pour immediately and discard the infusion after 5 seconds to awaken the tea.
5. Regular infusion: The first 3 infusions should be done in 10 seconds, increasing by 5 seconds after the fourth.
6. Pour slowly: Pour the tea into the gongdao bei at a 45° angle to avoid losing the aroma.
7. Smell and taste: First smell the “cold scent” at the bottom of the cup, then taste the tea to perceive its persistence and sweetness.
