Tie Guan Yin tea is famous for its unique aroma and intense flavor, and is one of the ten most famous teas in China. The farmers of Anxi have passed down traditional production techniques for generations, creating the distinctive flavor and quality of Tie Guan Yin.

Harvest Season

The best season for picking Tie Guan Yin is spring and autumn. Spring picking is usually around the Qingming Festival (early April), while autumn picking is in the eighth month of the lunar calendar. The new buds picked in spring are more tender, making them suitable for producing high-quality tea. Tea farmers usually pick by hand, ensuring the freshness and integrity of the leaves.

Traditional Infusion Method

For Chinese infusion, it is recommended to use a glass cup or teapot, keeping the water temperature between 90-95°C. Use 5 grams of Tie Guan Yin tea, infusing for 15 seconds in the first extraction. The infusion time can be gradually increased according to personal taste, generally up to 5-6 extractions, maintaining intense aroma and flavor.

Western Infusion Method

For European infusion, use a teapot: take 3 grams of Tie Guan Yin tea and add hot water at 95°C, leaving to infuse for 2-3 minutes. The tea can be served directly in the cup and, if desired, milk or sugar can be added to enrich the flavor, making it suitable for various moments of consumption.

Cold Infusion Method

Put 5 grams of Tie Guan Yin tea in 500 ml of cold water and leave in the refrigerator for 6-8 hours. The cold brew tea is fresh and sweet, with a delicate floral aroma, very suitable for summer consumption. This brewing method effectively reduces the bitterness of the tea, making the flavor softer, ideal for lovers of light-tasting tea drinks.
