Jin Jun Mei, also known as Zhen Shan Xiao Zhong, is a treasure of Chinese red tea with a history dating back to the 18th century. Originating from Tongmu Guanshan, Fujian Province, Jin Jun Mei is prized for its artisanal production and rigorous harvesting standards. With its rich flavor and unique aroma, it has become a very popular product in international markets, widely used in tea tastings and cultural exchanges.

Origin

This high-quality black tea comes from the high-altitude mountainous region of Tongmu in Wuyi Shan, Fujian Province. The climate is temperate and humid, with mineral-rich soil. These natural conditions favor the growth of tea bushes, allowing them to absorb valuable nutrients that give tea its distinctive flavor and aroma.

Harvest Season:

Jin Jun Mei is usually harvested in spring, around Qingming. During this time, the young, fresh and aromatic leaves are picked to ensure the highest quality. Only the finest buds and leaves are used to produce this premium tea, which reflects the natural essence of the Wuyi Mountains.

Chinese Infusion Method:

1. Take 5g of Jin Jun Mei tea and put it into a 150ml gaiwan, pour in 95-100°C water, and heat the tea for 3 seconds before straining.

2. For the main infusion, steep for 10 seconds, increasing by 5 seconds for each subsequent infusion.

3. You can reuse the leaves, enjoying the different flavors evolving with each infusion.

European Infusion Method:

1. Take 5g of Jin Jun Mei tea and put it in a 300ml teapot, add water at 95-100°C and leave to infuse for 3-5 minutes.

2. Adjust the infusion time to your taste; a shorter time brings out the fresh aroma, while a longer time leads to a more intense flavor.

3. Filter and pour into the cup, perfect for a slow tasting, to appreciate its full-bodied and enveloping flavour.
