Dragon Pearl Black Tea Brewing Method
1. Heat the teapot: Use boiling water to heat the teapots, increasing the temperature of the utensils. If the weather is cold, you can repeat the operation twice.
2. Moisten the leaves: Place the Dragon Pearl tea balls in the gaiwan, slowly pouring boiling water along the position of the balls, making sure that they tip over and open gradually. After pouring the water, observe whether the balls start to bubble. This step is to make the leaves open. After the bubbles have come out, you can strain the infusion, which is usually not drunk.
3. First infusion: Refill the gaiwan with boiling water, using a steady, low-pressure stream of water, allowing the water to gently hit the leaves. Wait about 20 seconds before straining the infusion. The first infusion can be discarded or drunk according to personal taste.
4. Second infusion: Quickly pour in the water in a stronger stream, hitting the tea balls to open them. Wait about 15 seconds.
5. Subsequent infusions: Continue pouring the water in a steady stream and drain quickly after each infusion.

Important Notes:
• Avoid long infusions: Do not leave the tea balls steeped for too long, to avoid the tea becoming too strong and altering the flavour.
• Control the water temperature: Although 100°C water stimulates aromas, you can adjust the temperature according to the tea situation and your personal taste.
